One of the earlier pioneers of artisanal ice cream in Singapore, Tom’s Palette has been in business for almost twenty years. Initially located in Shaw Tower, I visited its newly renovated outlet at Middle Road. Although occupying a bigger shop space, this old-school gelateria has managed to retain its simple, cosy atmosphere.
There are two types of waffles served here now: the Brownie waffle and the French Vanilla waffle. The latter is made from a yogurt-based batter, which I wasn’t feeling inclined to try this time, so I went with the Brownie waffle instead. I was told the bake-time was at least ten minutes, so I ordered a coffee in the meantime.

The Cappuccino was fairly standard, what you’d expect from a place like this, but nevertheless satisfied my caffeine fix. 3/5
The Brownie Waffle, on the other hand, really impressed me. It definitely lived up to its name, being satisfyingly fudgey and chocolaty in flavour, while still retaining the crispness I’ve come to expect from a good waffle. My dining companion and I picked Salted Egg Yolk and Honey Lavender as our ice cream flavours, both of which were great. 4/5

Tom’s Palette is known for its excellent Salted Egg Yolk gelato, for good reason. This tastes exactly how you’d expect a liu sha pau (salted egg bun) to taste in gelato form – sweet and custardy, with a strong (but not overwhelming) hint of salted egg yolk. 4.5/5
The Honey Lavender gelato was also pleasantly sweet with prominent notes of lavender, without being too heavily fragranced. A very calming and comforting flavour that matched the ambience of the café well. 4/5
With its quality gelato, inventive flavours and pleasant atmosphere, it’s easy to see why Tom’s Palette has managed to remain in business for so long.
