You might expect a cafe with a name like this to specialise in honey-based desserts and drinks. Instead, Apiary bills itself as a small-batch creamery that handcrafts its ice cream from scratch.
The Ice Cream: Apiary’s Signature flavour is made with wildflower honey, though, and a generous amount of cocoa nibs. It’s a combination that gives this flavour a smooth yet satisfyingly crunchy texture. The honey also complemented the ice cream’s inherent creaminess very well and was very refreshing, making me wish I’d ordered another scoop. 4/5
Blue Milk is the other bestselling flavor. The cafe’s website perfectly describes it as a milk-based ice cream infused with blue pea flowers and seasoned with Himalayan pink salt, but ‘addictively delicious’ should also be in there somewhere. Light, subtly sweet, and appropriately-but-not-overly milky, I did end up ordering a second scoop of this. 4.5/5
The Waffle: Apiary’s waffle is exactly the kind that I like best: light, airy, and baked with a yeasted batter that lends it a sourdough-like taste. However, it wasn’t baked long enough both times I had it (even when I requested it be baked longer the second time), which resulted in a disappointingly soft and squishy waffle that only had a bit of exterior crisp to it. 2.5/5
All in all, though Apiary’s waffle was quite the letdown, I’d still come back for the fabulous ice cream and pleasant ambiance. Located in one of those refurbished shophouses in the Outram area, this is a nice place to meet a friend, bring a date, or just chill by yourself. The coffee—which comes from local specialty roaster, 2 Degrees North—is really good, to boot.
